Paul's Honest Meal: Sneaky Chicken

That sneaky chicken…

At some point, KFC, Popeyes Chicken or any other kind of fried chicken has tempted and lustfully conquered even some of the most discerning of pallets. If everything tastes like chicken and more specifically organic free range fried chicken then everything must be delicious. But, if you are like the rest of us who suffer from New York’s square footage malnutrition and live in tiny spaces with tiny dogs and tiny kitchens probably don’t have the ability or the desire to purchase a deep fryer for the occasional glutinous submersion. As you have no option, but to love The Roots and to enjoy the occasional clove cigarette, you succumb to the fast food industry’s siren-like call of the delicious and obscenely detrimental to your health fried chicken.

So, what’s the answer? Do you pack it in and invest in bigger pants in the anticipation of a greasy deep fried future or do you grab your laptop, throw your play list on shuffle and give an alternative a chance? The alternative is the right combination of spices, a little grape seed oil and a little grape seed oil and a little something on the side.

 

Chicken drumsticks

Butternut Squash

Hungarian Hot Paprika

Morton & Bassett Cajun Spice Blend (paprika, celery seed, garlic, basil, white pepper, cayenne pepper, thyme and parsley)

Chili Powder

Pangu Salt

Nigerian Cayenne Pepper

Grape Seed Oil

The preparation of this meal is extremely simple. Chop all of the drumsticks in half, season to taste with the above listed spices (use only a little bit of the Nigerian Cayenne Pepper), drizzle with grape seed oil and place in the oven at 450 degrees. After 30 minutes, turn the chicken and don’t be shy make sure that it’s covered in its own juices. Continue to cook for an additional 15 minutes. Peel, clean and cut butternut squash, place it in the pan right next to the chicken (do not season) and once again baste it with the chicken juices. Continue to cook for 15 minutes and you’re done.

The beautiful thing about this dish is that you can use as much chicken and butternut squash as you need. The most important part is that you cut the drumsticks in half and use the right spices; everything else is up to the chicken, that sneaky chicken. Enjoy!

Fashionable Fridays ~ Planning a Good Weekend

BbqcrowdThis weekend is going to be hot and when it's hot - you have to get nibbles and beverages! Think back to previous weekends - maybe you grabbed icecream in the park, had brunch at an outdoor cafe or you enjoyed a back patio with friends. You have to change it up a bit by making sure you head out to the Big Apple BBQ sponsored by Snapple this weekend! I am so excited as The Kitten Lounge will be attending this event! I can't wait to tell you guys some of the hottest places in the city to enjoy BBQ and what cities are definitely bringing it too! Now if you want more than BBQ, you will enjoy yummie sides, dessert and beer! In addition to hanging out in Madison Park with tons of people that will be your jolly new friends, there will be live music and seminars. When you check in this weekend on the Kitten Lounge, I will bring you recaps of what you can enjoy as I will be there on Sat and Sun will have closing thoughts on this 10th annual event. Mingling Mondays ~ Cafeteria Definitely Brings Comfort

CafeteriaNothing is better than having favorite places but it's a lot more fun when you can share it with others and know that they love it too! Case in point, this week I have shared two places with my boyfriend - Jackson Hole (I love eating there although once I do, I tend to wait awhile before I enjoy another 7 oz hamburger) and Cafeteria! After a long weekend of looking for condos, we decided that we needed to relax and thanks to the rain that added to our weariness (and my drowsiness), I was in need of amazing food with a fun atmosphere! As we drove uptown I suggested Cafeteria. I have always been a fan of this 24/7 restaurant which reminds me of SoBe with a lot of love and comfort in pretty packaging. And as my bf enjoyed Chicken and Waffles and I munched on my Cobb Salad and shared out Fried Green Tomatoes, I was thrilled that just like he loved my hamburger place, he liked this one as well! With a nice vibe as always and food that leaves you feeling full and kudos to the much needed Guava Mojito - yesterday was definitely elevated to a fun day with a happy ending!

Snazzy Sundays ~ Rachel Ray

RrI can claim many titles, Internet Personality, designer, accessories obsessed, etc; however, when I speak with friends on the great debate on where they sit as a Baker vs a Cook - I do sit silently thinking that it would be nice to learn some recipes. I have to say that it can be a little intimidating. Somehow the idea of dealing in fashion, writing about accessories on See Pretty Things, posting here and designing for Kitten Couture - I never run out of ideas or steam; however, the idea of cooking makes me run for healthy takeout or wimping out by making salads. Maybe I'm not being completely fair since I have found ways to limp by - I am a fan of chicken. Not to say that I don't do chicken well (thanks to Wholefoods having pre-marinated chickens of various seasonings); however, I would like to know how to make some sides and do a little something. Ironically enough, I do enjoy watching the Food Network; however, I have yet to become completely introduced to the inner workings of my kitchen. A cookbook is definitely something that I should think about having and one of the cooks I respect is Rachael Ray who is able to integrate taking things that are pre-made with those things that you do yourself and within 30 mins. I also love that she has this cookbook of 365 items that you can make without any repeats! This is something that interests me! Run out and begin your collection with this book and I hope to let you know of successful recipes that I have been able to create and maybe I will create my own (baby steps). Mingling Mondays ~ The Sports Hang Out Spot

Blondies I went to Indiana University and I loved Sports - the bar. I loved that we would watch our games there and all of us had the best time. I definitely had my favorites in terms of drinks, snacks and more. Everytime I came by, the night was destined to be good and you were surrounded by other enthusiastic fans! Coming to NYC, I wondered where the best sports bars were and what ones were favorable to my Alma Mata. Blondies on the UES became one of my favorite places after the first time that I went. The "It Factor" came due to multiple TV screens, a great crowd and the wings. I love a place that has a variety of heat and for those that may be a bit shy - they have other options as well. Blondies is a great place to hang out as college basketball looms and if you're in the neighborhood, it's worth staking out your spot. In addition, they are super fast in terms of delivery - they totally hooked up two hungry wing lovers this past weekend who refused to brave the cold. Visit the site and then make your way there!
