
So with one of the biggest holidays coming up, all I can think about is what would be an amazing sweet treat to have as a compliment to an amazing Crawfish dinner! Well I had to visit Cocktail Times - now I know that many of you may know of it as a place to go to figure out amazing drinks; however, it is a great source to find meals that you can cook which incorporates alcohol as well. I came upon this Watermelon Hawaiian Salad that looks decadent, easy and really good. It definitely seems easy to prepare and uses coconut rum as well as various tasty fruits and can you beat presentation as you bring this out on a platter or you have them out on a nice sheet of sorts?
Watermelon Hawaiian Pina Salad
Ingredients: (Serves 8 to 12)
1 oz coconut rum
1 cup macadamia nuts
2 bananas
1 small papaya
Juice from 4 fresh limes
3 cups seedless watermelon balls or small squares
2 cups fresh pineapple chunks
1 cup freshly grated or unsweetened coconut
3 cups low-fat vanilla flavored yogurt
1/3 cup papaya seeds
Place the macadamia nuts in a food processor fitted with a steel blade and pulse them a couple of times just to chop them into large pieces. Then, place them in a non-stick heavy sautŽ pan and toast them over medium heat just until they turn golden, stirring constantly. Remove them to a heatproof dish or bowl and allow them to cool.
Peel and cut the bananas and papaya flesh into small chunks and toss them in the lime juice. Place the banana and the papaya chunks in a large glass bowl with the watermelon, pineapple and coconut. In another bowl mix together the yogurt and the papaya seeds. Pour over the fruit and coconut. Toss to combine. Place in a serving bowl or coconut shells. Sprinkle the toasted macadamia nuts over the top and serve immediately.
No matter how hot it is or what trip I'm going on, I always pack a cute graphic T-shirt. I may wear it while I'm there or I may wear it on the plane there. There is something about a graphic shirt that makes me feel comfortable and lets me know that whatever happens I won't find it cumbersome to move around. That being said, I could go for the cute tiny graphic t or something that is definitely bold and out there - making a statement. Last month, I posted about Sailor Jerry who participated in Project in Vegas . I remember seeing this shirt on the website and thinking that it would make a great entry for LAGOON since it's a great nautical blue and I love that it has the Spiced Navy Rum on there. This is definitely cute with jeans, short white shorts, yoga pants and more. It's a great look that could definitely be a staple when you're looking for something quick and cute to wear. In Part II of our series, Valentine's Sippin', I want to introduce you to another drink that would be perfect to enjoy on Valentine's Day. I love that this has Appleton Rum in it which is always nice no matter when it is enjoyed. I love that it has icecream in it which is perfect for my friends who are in warmer climates or for those that may actually be in Jamaica at this point!
Cherry Heartsicle
1.5 ounces Appleton VX Jamaican Rum
2 scoops vanilla ice cream
12 cherries without stems and pitted
2.5 ounces cherry juice
Add all of the above in a blender and mix until smooth and creamy. Garnish with a spear of cherries.
I love when the weather is in the beginning of making that drastic chill that will be here for months. The first few weeks, it's a novelty and that we're all frustrated and begging for spring. In the meantime, it's nice to think about having something to warm you up! I remember the first time I had an opportunity to sample Appleton Estate Rum - I love the rich flavors and after being introduced to Captain Morgan's Rum, I felt that this was a mature step for me. Rum is so much more than something to be mixed with orange juice (not to say that it isn't amazing with orange-mango juice) but there are many ways to enjoy it. I love that this is very simple to make but that the exotic flavors will definitely remind you of every sunny vacation you have ever taken. This is such a rich and welcoming drink that I believe this will be a standby for the season! I also love that you can play around with this as I have. I love Hazlenut coffee and have added this in as to black and have enjoyed it very much so! For the coffee lovers you will enjoy all the variations that are out there!
APPLETON JAMAICAN COFFEE
1 1/2oz Appleton Estate V/X Jamaican Rum
Hot Black Coffee
Whipped Cream
* Pour the Appleton Jamaican Rum into a coffee mug, fill with hot coffee and top with whipped cream.
